Tonight I made a start on this exercise - I worked out a good annual income I would like to earn over the next year and then multiplied by it by ten - The next bit was to then work out the number of income streams and it is here where I think I maybe simplifying it too much and interested in your thoughts
So - annual income is £34 000 x by 10 = £340, 000 and then if each income stream was approx £17 000 annually then that would be 20 streams. Is that all I need to do?

That's correct! It's an exercise in increasing you financial sphere of influence. How real does it actually feel? If it doesn't seem possible, then pull back. Take your time. Once you find a place where you have a sense of "doability" to it, notice where you are. What's the increase in income, and how many streams will that take? As long as you haven't pulled it back to less than doubling your current income, you have done the exercie correctly. BB
